After spending 15 years at Michelin-listed restaurants in New York and Los Angeles,
along with 2 additional years at a luxury sushi restaurant in Roppongi, Tokyo,
Chef Yoichi Akashi now brings authentic Edomae-style sushi to Kyoto’s Miyazu area,
using exceptionally fresh seafood caught daily on the Tango Peninsula.
The restaurant features only eight counter seats, allowing guests to enjoy the chef’s refined movements and craftsmanship up close.

The waters surrounding the Tango Peninsula are rich, productive fishing grounds that yield a wide variety of seafood throughout the year.
To bring out the very best of each fish, Chef Akashi applies precise and thoughtful Edomae techniques tailored to every ingredient.

Blending the international sensibilities he refined abroad with the delicate craftsmanship acquired in Japan,
he creates sushi that can be experienced only here — a unique expression of local ingredients and masterful technique.

Rice seasoned with red vinegar (akazu), premium Tango-grown rice,

Chef Yoichi Akashi

With many years of experience in Michelin-starred restaurants abroad and further training at a high-end sushi restaurant in Tokyo,
Chef Akashi offers consistently refined technique and exceptional quality.
Depending on the fish, he performs traditional Edomae preparations such as salting, kombu-curing, or marinating,
earning high praise from gourmets and sushi connoisseurs.
