New Dining Experience: Authentic Edo-Style Sushi Restaurant "Zabou" Opens. On April 15, 2021, the authentic Edo-style sushi restaurant "Zabou" opened, offering a new culinary experience. Just a minute's walk from Rurinohama, this tranquil spot near Kyoto's Amanohashidate provides a view of the Tango Sea. Enjoy meticulously crafted Edo-style sushi made with select ingredients, including locally sourced seafood, red vinegar, and rice.
Edo-Style Sushi Featuring the Bounty of the Tango Peninsula
The Tango Peninsula, where Miyazu is located, is blessed with abundant seafood.
In spring, you can enjoy seasonal delicacies like sea bream and tuna. Summer brings dishes featuring eel, abalone, and sword razor clam. In autumn, blackthroat seaperch and grouper are at their best, while winter introduces local crabs, including the elusive Matsuba crab, known as "Tajima crab," which appears with the opening of the crab fishing season on November 6. The yellowtail caught in Ine Town, one of Japan's top three yellowtail fishing areas, becomes a symbol of winter in Tango.
At "Zabou," you can savor not only these seasonal treasures but also other locally sourced seafood such as mackerel, trout, sea bream, abalone, and clams, each presented at its peak season.
Our dedication extends beyond just the seafood. The rice used for the sushi rice (shari) is meticulously selected by the head chef. Additionally, we use red vinegar from Iio Jozo, made from organic new rice grown in the local Miyazu terraced fields, ensuring a rich and flavorful Edo-style sushi experience.
Savor Tango's Cuisine in an Elegant Setting
At "Zabou," with only 8 counter seats, you can enjoy a unique dining experience as you face the chef across the counter. Watch and appreciate the chef’s skilled techniques while savoring their expertly crafted sushi.
The course consists of approximately 15 items, including both nigiri and appetizers, priced at 15,000 yen per person (tax included: 16,500 yen). The menu varies daily based on the day's selection, so only the omakase course is offered.
We look forward to welcoming you and hope you enjoy discovering the exquisite sushi that awaits.
Experience the Seasons and Enjoy the Craftsmanship
At "Zabou," the sushi is crafted by Yoichi Akashi, a seasoned chef with extensive experience both domestically and internationally. After spending about 15 years at Michelin-listed restaurants in New York and Los Angeles, Akashi returned to Japan and honed his skills at "Edo-mae Sushi Sushi-tsuu" in Roppongi, Tokyo, and "Sushi Chouza" in Miyazu, Kyoto, where he continued to refine his sushi-making craft for approximately two years.
His expertise and deep knowledge of seafood are evident in the Edo-style sushi he prepares, which has already garnered acclaim from numerous food enthusiasts and gourmets.
